Garlic Butter Lobster-Stuffed Biscuits

For the Lobster Filling
• 300 g cooked lobster meat (chopped)
• 2 tbsp butter
• 2 cloves garlic (minced)
• 2 tbsp cream cheese
• 3 tbsp mayonnaise
• 1 tbsp lemon juice
• 1 tsp paprika
• 1 tbsp chopped parsley
• Salt & pepper to taste

For the Biscuits

(quick method)
• 1 can refrigerated biscuit dough (8 pieces)
OR
(homemade biscuits)
• 2 cups flour
• 1 tbsp baking powder
• ½ tsp salt
• 6 tbsp cold butter
• ¾ cup cold milk or buttermilk

Garlic Butter Brushing
• 4 tbsp melted butter
• 2 cloves garlic (grated)
• 1 tbsp fresh parsley
• Pinch of paprika

1️⃣ Make the Lobster Filling
1. Melt 2 tbsp butter in a pan.
2. Add garlic, sauté 30 seconds until fragrant.
3. Stir in cream cheese, mayo, lemon juice, paprika, salt, and pepper.
4. Fold in chopped lobster gently.
5. Remove from heat and let cool slightly.

2️⃣ Prepare the Biscuits

If using canned biscuits:
• Flatten each biscuit slightly with your hands.

If using homemade:
1. Mix flour, baking powder, and salt.
2. Rub in cold butter until crumbly.
3. Add milk and mix until dough forms.
4. Cut into 8–10 biscuits.

3️⃣ Stuff & Shape
1. Add 1–2 tablespoons of lobster filling in the center of each biscuit.
2. Pinch the dough around the filling to seal.
3. Place seam-side down on a baking tray lined with parchment.

4️⃣ Bake
• Brush lightly with garlic butter.
• Bake at 200°C for 15–18 minutes, until golden.

5️⃣ Finish
• Brush generously with the remaining garlic butter.
• Add parsley and a pinch of paprika on top.
• Serve warm!
