4 large russet potatoes, scrubbed and diced
1/4 cup olive oil
1 packet ranch seasoning mix
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley (optional)

Instructions
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.
In a large bowl, combine the diced potatoes, olive oil, ranch seasoning, salt, and pepper. Toss until all potatoes are evenly coated.
Arrange the potatoes in a single layer on the prepared baking sheet.
Bake for 25–30 minutes, stirring halfway through, until the potatoes are golden brown and crisp on the edges.
Remove the potatoes from the oven and sprinkle cheddar cheese and Parmesan cheese evenly over the top.
Return to the oven for 5 minutes, or until the cheese is melted and bubbly.
Sprinkle with chopped parsley for color and freshness, if desired.
