Cheesy Mushroom-Stuffed Chicken Rolls with Lemon Butter Sauce

2 large chicken breasts (pounded thin)

1 cup sliced mushrooms

¾ cup shredded mozzarella or Swiss cheese

2 tbsp butter (for sauce)

Other Ingredients

1 tbsp olive oil

1 clove garlic, minced

½ cup chicken broth

1 tbsp lemon juice

Salt, pepper, Italian seasoning

Fresh parsley for garnish

Sauté mushrooms in a little oil with garlic, salt, and pepper until browned; set aside to cool.

Lay chicken flat, season lightly, then fill with mushrooms and cheese. Roll tightly and secure with toothpicks.

Sear chicken rolls in oil until golden on all sides.

Transfer to a 375°F oven and bake 12–15 minutes until cooked through.

Meanwhile, make sauce: melt butter in the pan, add broth and lemon juice, simmer until slightly thickened.

Pour sauce over chicken rolls and finish with extra cheese on top (optional).

Garnish with parsley and serve warm with extra mushrooms.
