For the Cups:
24 scoop-shaped tortilla chips or mini taco shells or wonton wrappers
1 cup shredded cheddar cheese
For the Filling:
1 lb (450 g) ground beef
1 packet taco seasoning
1 packet ranch seasoning (dry mix)
1 small onion, diced
1 cup diced tomatoes (fresh or canned, drained)
1 tbsp tomato paste (optional, richer flavor)
½ cup water
1 tbsp oil
Salt & pepper to taste
Chopped cilantro for garnish (optional)
Instructions
1. Prepare the Cups
If using wonton wrappers:
Place each wrapper in a mini-muffin tin and bake at 375°F (190°C) for 6–8 minutes until crisp.
If using scoop tortilla chips, skip this step — they’re ready.
2. Cook the Beef Filling
1. Heat oil in a skillet over medium heat.
2. Add ground beef and onion; cook until browned.
3. Drain excess fat.
4. Add taco seasoning, ranch seasoning, tomato paste, and water.
5. Stir and let simmer 5–7 minutes, until thickened.
6. Mix in the diced tomatoes.
3. Assemble the Bites
1. Place your cups or scoop chips on a baking tray.
2. Fill each with a spoonful of the beef mixture.
3. Top with shredded cheddar cheese.
4. Bake
Bake at 375°F (190°C) for 5 minutes or until the cheese melts.
5. Garnish & Serve
Top with chopped cilantro, sour cream, salsa, or jalapeños if you like.
Tips
You can swap beef for chicken, turkey, or beans.
Add corn or black beans to the filling for extra texture.
Make ahead: Cook filling earlier and assemble before serving.
