Ingredients
1 lb shrimp, peeled and deveined
9 oz cheese tortellini, fresh or refrigerated
1 tbsp olive oil
2 tsp Cajun or blackened seasoning
2 cups fresh spinach, chopped
1 tbsp butter
3 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and black pepper, to taste
Instructions
Cook the tortellini according to package directions. Drain and set aside.
Toss shrimp in Cajun or blackened seasoning. Heat olive oil in a skillet over medium-high and sear shrimp for 2 to 3 minutes per side until golden. Remove and set aside.
In the same skillet, melt butter. Sauté garlic for 1 minute, then add the cream and bring to a gentle simmer.
Stir in spinach and cook until wilted. Add Parmesan, stir until smooth, then season with salt and pepper.
Add cooked tortellini and toss to coat in the sauce. Top with blackened shrimp and serve hot.
