1 bone-in prime rib roast (6–8 pounds)
Salt and pepper, to taste
2 tbsp olive oil
Garlic cloves (optional, for added flavor)

Prep the Roast:
Take the prime rib out of the fridge 1 hour before cooking to let it come to room temperature. Preheat your oven to 500°F (260°C).
Season Generously:
Place the roast on a rack in a roasting pan. Rub the entire roast with olive oil, then season liberally with salt and pepper. For extra flavor, make small slits with a paring knife and insert garlic cloves throughout the roast.
Initial High-Heat Roast:
Roast at 500°F for 15 minutes to create a flavorful crust.
Lower the Heat and Finish:
Reduce the oven to 325°F (160°C). Continue roasting until it reaches your preferred doneness:
Medium-rare: 135°F (57°C)
Medium: 140°F (60°C)
Well-done: 150°F (66°C)
Use a meat thermometer for accuracy!
Rest the Roast:
Remove from oven and tent with foil. Let rest for 15–20 minutes so the juices redistribute before slicing.
Serve:
Slice and serve warm with your favorite sides—like roasted veggies, mashed potatoes, or horseradish sauce!
