Ingredients
300 g cooked chicken breasts, shredded or sliced
1 ripe avocado, mashed
4 slices sourdough or ciabatta bread
1 cup (100 g) shredded mozzarella or Monterey Jack cheese
2 tbsp (30 ml) olive oil or softened butter
1 tbsp (15 ml) lemon juice
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder (optional)
2–3 tomato slices (optional)
Fresh spinach or lettuce (optional)
Instructions
1. Mash the avocado with lemon juice, salt, pepper, and garlic powder.
2. Spread the avocado mixture onto two slices of bread.
3. Layer shredded or sliced chicken evenly over the avocado.
4. Add the shredded cheese on top of the chicken.
5. Add tomato slices or spinach if using.
6. Close each sandwich with the remaining bread slices.
7. Heat olive oil or butter in a skillet over medium heat.
8. Cook sandwiches 3–4 minutes per side until golden and the cheese is melted.
9. Slice and serve warm.
