For the Fritters:
2 cups all-purpose flour
1/3 cup granulated sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
2 large eggs
3/4 cup milk
1 teaspoon vanilla extract
3 tablespoons melted butter
1 1/2 cups peeled, diced apples (Honeycrisp, Gala, or Granny Smith work great)
For the Glaze:
1 cup powdered sugar
1–2 tablespoons milk
1/2 teaspoon vanilla extract
Instructions
Prepare the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Make the batter: In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt. In another bowl, whisk the eggs, milk, vanilla, and melted butter. Pour the wet mixture into the dry and stir until just combined. Gently fold in the diced apples.
Scoop: Scoop spoonfuls of the batter onto the baking sheet, forming little mounds (about 12 fritters).
Bake: Bake for 12–15 minutes, until lightly golden and set.
Glaze: Mix the powdered sugar, milk, and vanilla until smooth. Brush or drizzle the glaze over the warm fritters.
Serve: Enjoy warm! The glaze sets beautifully as they cool.
