I made the infamous Eggroll in a Bowl for my lunches this week — it’s pretty good! I might add something next time, but here’s how I made it:
Ingredients
1.75 lbs ground beef (odd amount because we eyeball and freeze the big pack)
1/2 onion, diced
2 bags coleslaw mix (cabbage cooks down a lot)
2 heaping teaspoons minced garlic
Seasonings to taste:
Salt
Pepper
Garlic powder
Onion powder
Instructions
In a large skillet, brown the ground beef with the diced onion.
Drain excess grease if needed.
Add the minced garlic and cook for another minute.
Add both bags of coleslaw mix and stir everything together.
Season with salt, pepper, garlic powder, and onion powder to taste.
Cook until the cabbage is softened and everything is well combined.
