2 ribeye or striploin steaks (1-1.5 inches thick)

2 tablespoons olive oil

4 garlic cloves, smashed

2 sprigs fresh thyme or rosemary

3 tablespoons butter

4-5 garlic cloves, minced

1 cup heavy cream

½ cup grated Parmesan cheese

2 tablespoons cream cheese (optional, for extra creaminess)

1 teaspoon Dijon mustard

2 tablespoons fresh parsley, chopped

Salt and white pepper to taste

Step 1: Prepare the Steak
Remove steaks from refrigerator 30-60 minutes before cooking to bring to room temperature

Pat steaks completely dry with paper towels

Season generously with salt and pepper on all sides

Step 2: Cook the Steak to Perfection
Heat a cast-iron skillet over medium-high heat until very hot

Add olive oil and wait until it shimmers

Place steaks in the skillet and sear for 3-4 minutes without moving

Flip and cook for another 3-4 minutes for medium-rare
