1 cup all-purpose flour

1 tablespoon cornstarch

1 teaspoon baking powder

1 teaspoon sugar

½ teaspoon salt

¼ teaspoon baking soda

¼ teaspoon onion powder (optional)

1 cup cold water (adjust for consistency)

1. Mix Dry Ingredients:
In a mixing bowl, combine the flour, cornstarch, baking powder, sugar, salt, baking soda, and onion powder.

2. Add Water:
Slowly whisk in the cold water until you get a smooth, lump-free batter. It should be slightly thinner than pancake batter.

3. Rest (Optional but Recommended):
Let the batter rest for 10–15 minutes for a better texture.

4. Use for Frying:
Dip your fish (or chicken, shrimp, etc.) into the batter, let excess drip off, and fry in hot oil (350–375°F) until golden and crispy.
