Ingredients:

2 white fish fillets (such as cod, halibut, or tilapia)

2 tbsp olive oil

1 lemon (juice + zest)

2 cloves garlic, minced

1 cup cherry tomatoes, halved

½ cup Kalamata olives, sliced

¼ cup red onion, thinly sliced

¼ cup feta cheese, crumbled

1 tsp dried oregano

Salt & black pepper to taste

Fresh parsley for garnish

Preheat oven: Set to 400°F (200°C).

Prepare the fish: Place fillets on a lined baking dish and drizzle with olive oil and lemon juice.

Season: Sprinkle salt, pepper, garlic, and oregano over the fish.

Add toppings: Scatter cherry tomatoes, olives, and red onions around the fillets.

Bake: Bake for 15–18 minutes, or until fish flakes easily with a fork.

Finish: Sprinkle with crumbled feta and fresh parsley before serving.
