– 1 pound large shrimp, peeled & deveined
– 1 cup water
– 1 cup white vinegar
– 1/2 cup granulated sugar
– 1/4 cup kosher salt
– 1 tsp mustard seeds
– 1 tsp coriander seeds
– 1/2 tsp ground turmeric
– 1/2 tsp red pepper flakes (adjust to taste)
– 2-3 garlic cloves, sliced
– 1 medium onion, thinly sliced
– Fresh parsley or cilantro, chopped (optional)

1. Prepare the brine: In a saucepan, combine water, vinegar, sugar, salt, mustard seeds, coriander seeds, turmeric powder, and red pepper flakes. Bring to a boil, stirring until sugar and salt dissolve.
2. Sauté aromatics: In a pan, heat a bit of oil and sauté garlic and onion slices until fragrant and lightly browned.
3. Pickling: Pack shrimp, garlic, and onion into a clean jar. Pour hot brine over, ensuring shrimp is covered. Let it cool, then refrigerate.
4. Wait & serve: Let it pickle for at least 2 hours. Serve chilled, garnished with parsley or cilantro if you like!
