1 ½ cups shredded mozzarella cheese (low-moisture works best)
½ cup shredded Parmesan cheese
1 teaspoon Italian seasoning
(Optional) ¼ teaspoon crushed red pepper flakes (for heat)
(Optional) Mini pepperoni slices or chopped pepperoni
(Optional) Pizza sauce for dipping

Preheat the Oven: Preheat to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat for easy removal and even crisping.
Mix the Cheeses: In a bowl, combine mozzarella, Parmesan, and Italian seasoning. Add red pepper flakes if you like it spicy.
Scoop and Space: Drop tablespoon-sized mounds of the mixture onto the baking sheet, leaving about 2 inches between each they spread as they bake.
Add Toppings: Press mini pepperoni or your chosen toppings lightly into each mound for that classic pizza look.
Bake: Bake for 7–10 minutes, until melted and the edges turn golden brown. Keep an eye on them the difference between perfectly crisp and burnt is just a minute!
Cool: Let cool on the pan for 5 minutes. They’ll firm up into crispy, savory chips as they cool.
Serve: Enjoy as-is or dip in warm pizza or marinara sauce for the full pizzeria experience.
