SAUSAGE, ONION, BELL PEPPERS & TOMATOES OVER RICE

 

 

 

 

 

 

 

 

Ingredients:

1 lb turkey sausage, sliced into ¼-inch rounds

1 large green bell pepper, sliced

1 medium yellow bell pepper, sliced (optional)

1 large yellow onion, sliced

1 cup cherry tomatoes, halved (or 1 medium tomato, diced)

2 tablespoons olive oil or butter

1 teaspoon garlic powder

1 teaspoon black pepper

½ teaspoon salt, or to taste

1 teaspoon Cajun seasoning (optional)

2 cups cooked white rice, for serving

1️⃣ Heat the Pan:

Warm olive oil or butter in a large skillet over medium heat.

2️⃣ Brown the Sausage:

Add turkey sausage slices in a single layer. Cook for 4–5 minutes per side until browned. Remove and set aside.

3️⃣ Sauté the Veggies:

In the same skillet, sauté sliced onions and bell peppers for 5–6 minutes until soft.

Add cherry tomatoes and cook for another 2–3 minutes until softened.

4️⃣ Season and Combine:

Return the sausage to the skillet. Add garlic powder, black pepper, salt, and Cajun seasoning (if using). Stir well to combine.

5️⃣ Simmer:

Cook everything together for 2–3 more minutes, letting the flavors blend and the tomato juices reduce slightly.

6️⃣ Serve:

Spoon the sausage and veggie mixture over hot, cooked white rice. Serve immediately and enjoy!
