Beer, Wine & Liquor
1/3 cup White wine, dry
Instructions
1. Prep the Steak
1. Pat the filet mignon dry.
2. Season both sides with salt, pepper, garlic powder, onion powder, paprika, and a little all-purpose seasoning.
3. Let the steak sit at room temperature for 10–15 minutes.
2. Cook the Steak
1. Heat 2 tbsp olive oil in a cast-iron skillet over medium-high heat.
2. Add 2 tbsp butter and the thyme sprigs.
3. Sear the steak 3–4 minutes per side for medium-rare (adjust to preference).
4. Baste the steak with the melted butter while cooking.
5. Remove the steak from the pan, tent loosely with foil, and let it rest.
3. Prepare the Shrimp & Lobster
1. Split the lobster tails down the center and remove the meat. Cut into bite-size pieces.
2. Season the lobster and shrimp lightly with salt, pepper, and smoked paprika.
3. In the same skillet (do not clean it), melt 2 tbsp butter.
4. Add the shrimp and cook 1–2 minutes per side until pink. Remove.
5. Add lobster pieces and cook 2–3 minutes until opaque. Remove and set aside.
4. Make the Lobster Cream Sauce
1. In the same skillet, melt 4 tbsp butter.
2. Add 2 minced garlic cloves and cook 30 seconds.
3. Pour in 1/3 cup dry white wine and let it reduce by half (1–2 minutes).
4. Add 1/4 cup clam juice and stir.
5. Pour in 1½ cups heavy cream.
6. Season with:
1 tsp garlic powder
1 tsp onion powder
1½ tsp smoked paprika
Salt & pepper to taste
7. Simmer on medium-low for 5–7 minutes, until thick and silky.
8. Return the shrimp and lobster to the pan and coat them in the sauce.
9. Add the final 2 tbsp butter to enrich the sauce (optional but amazing).
5. Assemble & Serve
1. Place the rested steak on a plate.
2. Spoon the creamy shrimp & lobster sauce generously over the top.
3. Garnish with fresh thyme or parsley if desired.
Tips
Serve with mashed potatoes, rice, or asparagus.
If sauce becomes too thick, thin with a splash of wine, cream, or seafood stock.
For extra richness, add grated Parmesan (optional).
