4 chicken breasts
3/4 cup chopped broccoli
1/2 cup shredded cheddar cheese
2 tbsp softened cream cheese
Crumbled bacon (optional)
4 slices of cheese (for topping)
Garlic powder
Pink Himalayan sea salt
Black pepper
Instructions
Preheat your oven to 400°F.
In a small bowl, mix together the broccoli, cheddar cheese, cream cheese, and bacon (if using). Set aside.
Season each chicken breast with garlic powder, salt, and pepper.
Carefully slice each breast lengthwise to create a pocket—cutting almost, but not completely, through.
Stuff each chicken breast with the broccoli-cheese mixture and secure with toothpicks.
Place the stuffed chicken into a baking dish and top each breast with a slice of cheese.
Cover the dish with foil, making sure the foil does not touch the cheese.
Bake for 40 minutes, or until the chicken reaches an internal temperature of 165°F.
Remove the foil and broil for 3–6 minutes to brown the top.
