Grilled Surf & Turf Skewers with Chimichurri

For the Skewers:

* 1 lb shrimp, peeled & deveined

* 1 lb beef steak (sirloin works great), cut into 1-inch cubes

* 1 red bell pepper, cut into 1-inch pieces

* 1 green bell pepper, cut into 1-inch pieces

* 1 onion, cut into 1-inch pieces

* 2 tbsp olive oil

* Salt & pepper, to taste

For the Chimichurri:

* 1 cup fresh parsley, chopped

* 1/2 cup olive oil

* 1/4 cup red wine vinegar

* 4 cloves garlic, minced

* 1 tsp red pepper flakes

* Salt & pepper, to taste

Preheat grill to medium-high heat.

2️⃣ In a bowl, combine shrimp & beef. Drizzle with olive oil, season with salt & pepper, and toss to coat.

3️⃣ Thread shrimp, beef, peppers, and onion onto skewers, alternating ingredients.

4️⃣ In another bowl, mix all chimichurri ingredients and adjust seasoning.

5️⃣ Grill skewers 8–10 minutes, turning occasionally, until shrimp is opaque & beef reaches your preferred doneness.

6️⃣ Remove from grill, drizzle with chimichurri.

7️⃣ Serve immediately & enjoy!
