Ingredients
For the Steak Bites
1 lb (450 g) sirloin or ribeye steak, cut into cubes
2 tablespoons butter
1 tablespoon olive oil
3 cloves garlic, minced
1 tablespoon chopped parsley (fresh or dried)
½ teaspoon crushed red pepper flakes
Salt and black pepper, to taste
For the Eggs
2 large eggs
1 tablespoon butter or leftover steak juices
Salt & pepper, to taste
Instructions
1. Prepare the Steak
1. Pat the steak cubes dry with a paper towel—this helps them sear better.
2. Season generously with salt and black pepper.
2. Cook the Steak Bites
1. Heat a cast-iron skillet over medium-high heat.
2. Add olive oil and 2 tablespoons of butter.
3. Once the butter melts, add the steak bites in a single layer (do not crowd the pan).
4. Sear for 2–3 minutes per side until browned and cooked to your desired doneness.
5. Add the minced garlic, parsley, and red pepper flakes.
6. Toss for another 30–40 seconds until fragrant.
7. Remove steak bites from the skillet and keep warm.
3. Fry the Eggs
1. In the same skillet with the leftover garlic-butter juices, add 1 tablespoon of butter if needed.
2. Crack in the eggs gently.
3. Cook sunny-side-up until the whites are set but the yolks remain runny.
4. Season with salt, pepper, and chili flakes.
